Yeah im super left-wing but this situation just stinks
Hardware support is perfect on linux and they allow you to buy it without paying for a windows liscence
You may want to try oit magic earth or organic maps, although i personally dont like them as much
Openstreetmaps data is very good, and several degoogled custom roms support android auto (/e/os comes to mind) and the paid version of osmand has android auto support, the free version of the (inferior)agic earth does too

You can edit system files with layering, but it’s not as straightforward
The basic of immutable desktops is that every system file (what’s outside your home directory (folder) ) is readonly, you can install apps through the app store.
But I’d say Linux mint (a Non-immutable) distro is what you should try first, because it’s more user-friendly and easier to get help for.

There’s a lot of work going into nvidia on linux ATM, so its improving pretty fast, but Also you can get a faster amd GPU with the money you can get from selling your 2080 ti
